I am wiped out today!  I had lots to do, so I am just gonna post some pics and get on to my nice relaxing evening.

Lunch today was an egg wrap again.

1 egg

1/4 cup Egg Beaters

1 egg white

Whisked together and topped with mushrooms and rolled in a tortilla with LC cheese spread.  I also used some mustard for dippage!

Snacks today were of course a yogurt mess:

Yoplait plain Greek

raisins

Fiber One Honey Clusters (I LOVE this cereal)

I also roasted a can of chick peas for the first time today.  I loved it.  Big Girl liked the chickpeas raw, BEFORE I cooked them and then she didn’t want anything to do with the crunchy little seasoned chickpeas!

I also munched on a plate of deli sliced turkey and mustard.

Dinner was quick because B is still helping his Mom move and so he was not home.  I made  chicken breast with water chestnuts, and mushrooms all grilled together on the stove top.  I also had a cucumber salad on the side.

So good!  Well peeps, I am off to finish up the night with the kiddos.  I think I heard Candy Land was in my future.

Good morning!

I tried something a little different this morning for breakfast. 

I cooked a 1/2 cup of egg beaters and 1 egg white together and made an egg burritto.  I also added some chopped mushrooms and rolled it in a La Tortilla tortilla wrap.

It made the tortilla break open a little, It was pretty stuffed!

I am STARVING today!!   I snacked on some Kashi Heart to Heart in the car.  I also ate my morning snack of a pear at my desk.

Can’t wait until lunch!  I’m gonna leave you with my 2 desserts from last night.

I had a bowl of strawberry fro-yo and choco-chips.

 Then a toasted crumpet with peanut butter, choco-chips, and a little coconut flakes sprinkled on top!

 Mmmm!

Hooray for Wednesday!  Happy Hump Day people!

So B was still pretty sick last night and he didn’t have much of an appetite.  I decided to take advantage of the opportunity to feed myself something unique that only I would eat.  I don’t like making special meals just for myself at dinner.  The kids have to eat what we cook, so I don’t break my own rule!  Last night was the exception though.  While the girls enjoyed pancakes and eggs for dinner…their request and who doesn’t love breakfast for dinner?!

I made an eggplant parmesan inspired by running, eating, & living in the real world’s dish, and a baked egg casserole courtesy Low…and behold’s recipe

Go me!  I don’t cook, so this was an accomplishment!

My eggplant parmesean was made up of:

2 slices eggplant

5 slices Oscar Meyer smoked turkey

mushrooms

I layered it with sliced roma tomato and reduced fat colby crumbled on top. 

I didn’t have marinara sauce so I used some squeezy pizza sauce we had, and it worked!!

I topped it off with the slice of eggplant and baked in the oven at 415 degrees for 15 minutes while I gave the girls the quickest bath of all time.

I also had made the baked egg dish.

2 egg whites and 1 egg whisked in with 1/3 cup of milk (because I did not have cottage cheese)

1/2 a garlic & herb LC cheese wedge

sautéed mushrooms and red bell peppers were added

bake in the oven at 375 for 15 minutes

Don’t let that little slice fool you because I ate the whole thing!

So needless to say dinner was amazing at my little table for one last night.  I finished the night off with a vanilla Chobani mixed with a dark chocolate chip flax cookie and some raisins.

This morning I woke up feeling like after all the egg I ate last night I needed some oatmeal.

I whipped up a quick batch of 1/3 cups oats, 2/3 cup water, cinnamon, and 1/2 a banana.  I also added a little PB too.

Off to enjoy the rest of this rainy stormy day.  Oh yeah the sunshine has left us again folks.  Oh well!  I do like the rain too.  Patience, the sun will soon be out in full force before I know it!

I just need to keep my positive energy flowing and make sure this headache I have doesn’t turn into a full blown sick-ache.  That’s how B started getting sick was with a headache.  Ugh!

One week ago today I started my blog!  Hooray!

OK –  now on to the food.  Since it is Sunday B’s dad brought donuts for the girls and us.  Even though donuts are not really my thing he will bring a stuffed egg,  sausage,  and jalapeno biscuit for me.  A little greasy, but very, very good!  I do love me some jalapenos!

I can’t even begin to tell you the calories in this bad boy.

A few hours later I had two clementines:

Lunch was a sandwich with cucumber slices, lettuce, dijon mustard.  Some peppered turkey and reduced fat colby jack cheese.  I paired it with some baked pita chips and sea salt and made some dijon-y salsa dip.

I love these baked pita chips from Archer Farms!  Good stats too!

About 3 pm I fixed a snack which was just half a Thomas Light English Muffin toasted and  spread with a little Better N’ Peanut Butter with a side of grapes.

Good stuff.  I made a bean salad today for lunch this week, and now we are trying to decide what’s for dinner tonight.  Sounds like left overs!
