Yesterday the family and I went to an Easter egg hunt put on by the city.  The weather was gorgeous and there were a TON of people!  Both girls were pumped and ready to load up their baskets with eggs strewn about.

But with so many kids it was crazy!  When they said GO it was a mass frenzy and Big girl had her heart set on one of about 5 stuffed Easter bunnies out for grabs that she didn’t pick up any eggs!  She did not get a bunny, so when she realized all the eggs were gone in about 2.2 seconds the tears came up!  Thankfully another little girl gave her some of the eggs she collected so Big girl would have some.

We then did some grocery shopping before heading over to my Dad’s house for some more Easter fun!  I failed to take a pic, but he grilled up some of the best burgers I have had in a long time!  I love homemade burgers, they are the absolute greatest!

For dessert we indulged in some vanilla ice cream and peanut butter chocolate chip cookies!

The girls then got busy coloring Easter eggs and then they got to partake in a “real” Easter egg hunt!  They had a great time at their Grandpa’s house!

It felt so nice to be outside in the sun!  I think I even came home a little less translucent!

It was a very windy day!  We had such a fun afternoon!

I started my day yesterday with some oatmeal, sugar-free strawberry preserves, flaxseed, cinnamon, and almonds.  Breakfast fuel to keep up with the Easter egg hunting fools!

And for dinner we decided to keep it simple and made homemade pizzas!  We used flat bread and sort of dressed our own.  My pizza included spinach, mushrooms, red bell pepper, and sliced Canadian bacon on the bottom.  You can’t really see it.  B and the girls both had turkey pepperoni and Canadian bacon on theirs.

Last night’s dessert was a yogurt mess of course!  I used 1/2 cup of Fage 0% i picked up on special at Kroger yesterday!  I scored an awesome deal, the entire 2 cup container was only $3.79!  I grabbed two!  I mixed with some Carmel Delight Fiber One, raisins, and some of B’s chocolate Fro-yo.  Ben & Jerry’s I think!

It was a fun-filled Saturday!  The kind of day you wished you had every weekend.  I am totally loving the warmer weather and can’t wait to get some yard work done too!  Hooray for Spring!

This morning the ground was covered with a thin layer of snow.  Let’s just say I am not a fan.  This winter has been harsh and I am ready for it to be over.  How come I feel like I’ve said that before?

B’s dad did not come over this morning due to the snow.  So that meant no donuts!  My girls were crushed.  To help make them feel better, I made them waffles and sugar-free strawberry preserves.  They forgot all about donuts soon enough.

I however made myself something a little more… me!  An egg sandwich with a 1/4 cup egg beaters, 2 egg whites, and spinach.  I also added a couple slices turkey to the sammie.

Mmm..runny hot sauce!

I love eggs!!  You probably haven’t noticed that though!  That held me all the way through to lunch.  For this meal I wasn’t really feeling anything in particular today.  I am trying to use up our near gone food so we can avoid having to throw anything out.  Does anyone else’s household eat something to the very end and then just let the last of whatever it is sit?  The last few grapes, the last pieces of lunch meat, for example.  I think it is because we buy new, and then you want to try the new product over last week’s old news.

I quickly threw together a turkey/roast beef wrap.  The insides were sliced peppered roast beef and Cajun seasoned turkey breast topped with baby spinach and Dijon mustard wrapped up in a La Tortilla tortilla.  On the side were some Stacy’s naked pita chips.

Yummers!!  Fridge scraps can make the best meals sometimes.

This afternoon was an un-pictured crumpet (the last one) spread with sugar-free strawberry preserves and Better N Peanut Butter.  I also made one of those frozen in a bag Yoplait smoothies.

It was just Ok.  Nothing special.  When I finished blending it and picked up the pitcher, the bottom of my blender came off and thankfully the smoothie was pretty thick or else I would have had a much larger mess on my hands than what I did.  Oh fun times!  Both DD’s and their friend from next door each had a smoothie too.  They thought it was ice cream!

I really wanted a yogurt mess but I can easily spend WAY too much on just yogurt.  I am trying to watch my consumption of expensive Greek yogurt.  Even when it’s the cheap-er versions it’s still expensive.

Dinner was something usual, but delicious.  Wacky pasta!!!  One of B and my faves.  Turkey italian sausage and veggie noodles.

Looks good doesn’t it??  MmHmm, it was!

So it’s Monday tomorrow, but I am looking forward to working out in the AM.  I’ve missed it this weekend, and it’s just been too dang cold to go outside and do anything unfortunately.

I think I will make a huge yogurt concoction tonight, or a little one, but either way…it’s on with the dairy goodness filled with random stuff!!

Good night!

I really have no time to chat, but I felt I’ve been neglecting my blog here recently.  I’ve got sick kiddos to keep me occupied!  So sad for sick babies!!  😦

I am feeling fine and before my oldest was bitten by the bug this morning I managed to get in about 30 minutes of treadmill action to start my morning.

Not before I devoured one of these 3 hours earlier though:

A lovely bowl of pumpkin oatmeal!!

1/4 cup oats

1/4 cup pumpkin

LOTS of cinnamon

Almonds to mix in

It was AWESOME.  (My first bowl of pumpkin oats…can you tell?)

After my workout I scarfed a 1/2 cup of low fat cottage cheese.

Yeah, there is no photogenic way to capture  cottage cheese in a Tupperware bowl on your desktop.

I may have also had some Savory Honey Mustard Pretzels by Archer Farms on my way to pick up Big girl today.  🙂

Lunch was left behind at work, but I re-created it at home!

1/2 cup egg beaters

2 egg whites

spinach and red pepper

La Tortilla Whole Wheat Tortilla

LC spread

I paired the egg burrito monster with a salad.

OMG!  I LOVE this so much!!  I can eat this pretty much all the time.  I also had it yesterday for lunch I’m afraid so I’ll spare you the double take and post just the one pic.

Here is a rundown of random picks of food from recent.

Yogurt mess with blueberry pancake, and Kashi Heart to Heart:

97% Fat free Hebrew National on wheat.  Mustard, hot sauce, pickles, and cheese.  I toasted a pita pocket and make pita chips on the side.

Another yogurt mess, this time with Fiber One Honey Clusters, and raisins.  Probably my most favorite combinations of all time!

Left over chicken pita pocket and a side salad for lunch the other day.

This was pretty gross actually.  A Strawberry flavored greek Yoplait and Yogi Blueberry Crisps mixed in.  Sounded good at the time, but this combination just DID NOT WORK this time.  I fought through the taste of barf unpalatable taste, and finished it anyways.  I love yogurt just too much to be wasteful!

Enjoy the yummys…gotta run!

I wake up every morning thinking about food!

It’s why I blog, to get it out in the open.  I love food!  No let me re-phrase that, I love the power of food!  The little pieces of energy you consume that will either give you that extra burst to get you through the day, or make you want to sink into a lazy afternoon slumber.  Food has the power to interfere with your emotions and in many cases food can often control your emotions.  Food provides us with the nourishment and the fuel to live!  That is why I love food.  If (and maybe one day I will) I could do it again, I would so go back to school to become a registered dietitian, or nutritionist, or something in that field.  I have no clinical meaning to anything I say…but it would be nice to change that.

So moving on to breakfast this morning.  I enjoyed  a 1/2 cup of egg beaters and a toasted crumpet spread with apple butter!

It was filling and just what I wanted.

Lunch was once again my lobster ravioli and green beans.  I made a sort of alfredo sauce on the fly by melting Garlic and Herb LC on the ravioli.

My afternoon workout was 20 minutes on the elliptical, and I tried out our weight machines for another 10 minutes.  I am still learning the machines in my fitness center at work, and am still limited on my time since I can’t miss actual eating time during my hour long lunch break.

It’s been nice getting back into a fitness routine since last year.  Last year I did kick boxing for about 6 months until my work schedule conflicted with  the hours of the class.  I tried to keep it up at home by running and stuff but with normal distractions, my workout routine went by the wayside.

I am ready to get my blood moving again!  I would love to be able to do something like a 5K in the near future!  How fun would that be!?  I am trying to talk B into doing something like that with me.  He defiantly would, it’s just …finding the time!  Damn!

We went to Big girl’s open house tonight at school!  She was so proud.  Mommy almost didn’t make it though…I got held up at work and got there in time to see her classroom and tell her teacher hello, then good night!  At least I made it.   Super Dad B took her and Baby girl a little early so they would have time to tour the school and meet her other music and art teachers.

Well all, I am off to watch some TV with the hubby!  Good night!

Even though this day is almost over for me, it feels like it hasn’t even begun.  There has been so much to do at work, and it’s been one of those stressful days.  Ahh!  I hate days like those.  You just go all day with this nervous energy, and can do nothing but  be a marshmallow once you get home.

*Sigh, tomorrow is a new day.

This morning began like most others, eggs and a toasted light english muffin with LC cheese spread on the muffin and cooked in the eggs.

My morning snack was half an apple and half a kiwi.  Even though I wasn’t exactly starving I knew 5 hours after breakfast I should eat something.

I’m glad I did cause I do love kiwi’s!!

I was excited about lunch today.  I had made a tuna salad last night with chopped carrots, cucumber, pickle, tomato, and some Dijon mustard.  Super tangy!  I rolled some up into lettuce wraps, and then I ate the rest with a fork!  I also dipped my baked pita chips in it.  I finished it off with the other half of my apple.

I was loving my lunch today!

I wish I could say that about the rest of my day.  Nervous energy stuck around and I munched on half a Z bar before realizing that I really wanted my yogurt with the other half of my kiwi mixed in.

Nervous energy made me not be able to think straight…hmmm.  It’s Ok I probably would have eaten both anyway.

Hopefully my evening will be less energetic and I will be able to relax.  Does the Biggest Loser come back on tonight??
