Sorry about being MIA for the past few days, but honestly I haven’t felt “into it” lately.  I haven’t really been feeling the need to rush off and blog about what I’ve eaten recently.  I haven’t photographed all my food either.  It’s been pretty repetitive anyway.  If it’s not broke… 

I can assure you my breakfasts have looked like this all week:

Fiber One with Almond Milk, and either strawberries or blueberries.  I am usually not a fan of this much milk in my cereal.  This morning though I measured my milk to show myself the serving size 1/2 cup.  Suggested serving is 1 cup and even the 1/2 cup was WAY too much for me to handle on a normal day.  Just sayin.

I did get a couple of slices of this at Big girl’s Tae Kwon Do bake sale.

Homemade Pumpkin bread!  OMG! 

Had I been blogging daily you would have seen it in these little mixes everyday!

So yum!

Lunches have been pretty salad-y with a couple of days looking just like this:

Spinach, mushrooms, carrots, cucumber, grape tomatoes, diced pear, and cottage cheese.

I also slipped in a meaty wrap a couple of days ago.

Turkey and pastrami on a La Tortilla Whole Wheat.  Did I mention mustard??

I have snacked on a little of this and a little of that.

Last nights dinner was  baked salmon and couscous.

Wow!  That’s one BAD picture!!  But the grub was right on!

Tonight though we let the girls decide on what they wanted to eat.  B said they picked but I have a feeling he helped “suggest” what dinner should be.

Little Ceasars $5.00 Hot and Ready!  Uh-huh!  Yeah…it was good though.

Check out how freakin CUTE these little Easter candies are!!

They were delivered to us a work by one of our residents and they are Easter egg chocolates!  So cute and full of chocolate!  I ended up having a pretty indulgent day. 

I wasn’t going to post anything tonight, but I am glad I did.  It feels good to get caught up.  Oh!  And check out the new little Foodie Blogroll widget on the side!  I am moving on up!  Now if I could get more than 3 people to read my blog it may give me a little more inspiration to converse with an actual audience.  Ever get the feeling you are talking to yourself?  Sometimes I do.

Now I really must go figure out what I did to my camera camera phone and fix my horrible pictures!!

Pumpkin Bread

Good evening happy people!  Assuming you’re happy that is.  We just put the kids to bed and The Biggest Loser is on in the background.  Do you hear that??  Neither do I.  Ahh, silence.

I am sure most everyone goes through a period of feeling stuck in a rut routine that gets really frustrating sometimes.  Not a rut in family life.  I don’t mean anything negative really by saying that-it’s just a lack of time to collect my thoughts and feel…sane, and at ease with my home and self.  My struggle is the lack of time to get everything I feel like I want to, or feel like I NEED to get done, done.  It is extremely frustrating to leave the house at 7:30 in the morning not to return until nearly 7:00 pm.  During that 12 hour stretch I was able to see my family for approximately 1 hour in the AM before school/work.  I was able to work out for exactly 15 minutes (WTH!) because after driving an hour to work, that’s all the time I had left.  I leave work at 6pm only if I am actually able to get out the door on time, and drive 45 minutes to get home.  We eat dinner, and get the kids bathed and in bed.  Now it’s about 8 pm, and I am exhausted! 

I know I will look back on these times and wish I could have them back, with my babies being babies and all…but dang!  For anyone out there who juggles a family, and career, and the evil bills that make it necessary to have the toilets flush and DVD player turn on, then I feel you.  It brings you the most joy you’ll ever be capable of feeling, as well as the highest stress levels one is capable of having.

I am reminded of a simple saying my Dad has used from time to time:  “This too shall pass.”  All too quickly I’m sure.

On to my FOOD!!

Let me recap Monday and Tuesday for ya!

BREAKFAST

Monday:

1/4 cup egg beaters, and 2 egg whites mixed with spinach.  Also a bowl of Fiber One cereal.

Tuesday:

Today was just a simple bowl of Fiber One and strawberries.

POST WORKOUT SNACKS

Monday:

1/4 up low-fat cottage cheese and half a pear.

Tuesday:

A banana.  🙂 Sorry no picture.  I ate it too fast.

LUNCH

Monday:

Monday’s lunch was a big ‘ol salad.  In the bowl was spinach, sliced mushrooms, banana peppers, baby carrots, grape tomatoes, cucumber, black olives, a can of Swanson chicken Breast, snow peas, 1/2 cup of cottage cheese.

I licked the bowl.  It was good, real good.

Tuesday:

Veggie snacks, Morningstar Farms Veggie Patty, mustard, an apple.

AFTERNOON SNACKS

Monday:

Yogurt Mess with the other half of my pear from the morning, and some raisins.

Half a Banana Bread Larabar that I got for a steal at Marshall’s.  I LOVE to hunt their food goodies for stuff like this there!

Tuesday:

Yogurt mess with a kiwi, and raisins.  Redundant much?  I think so, but it’s OK.

DINNER

Monday:

Tacos!  La Tortilla tortillas, Jenny-O taco seasoned turkey meat, veggies, and fat-free refried beans.  Yum! 

Tuesday:

Tonight hubby was feeling creative.  He wanted to make a turkey smoked sausage dish but instead of the normal pan fried method he uses, he baked it in the oven with stewed tomatoes, sliced mushrooms, black beans, baby carrots, black olives, and red bell pepper.  He also went as far as to make a “topping” out of crushed Fiber One cereal to go over the mixture.

He likes to plate…very sweet!

It was delicious!!  The kids liked it too, so it was a hit across the board! 

I have the best husband ever!  Which gives me even more reason to want to get home as quickly as possible after my glorious days spent punching the clock.

I am off now to watch the rest of The Biggest Loser and make something yummy to nosh on.

I hope all of your Friday’s are going well!  Mine is almost over so it is just fine. 

I worked out for 10 minutes on the elliptical and after a 2 minutes cool down I started on some weight training.  I did 10 reps of 10 2 times on a couple of machines I do not know the name of.  It left me with shaky arms, so hey I guess it worked huh?

Lunch followed with a Morningstar Farms veggie burger.  I used whole wheat sandwich thins and dressed with mustard and the typical veggies…with a bowl full of veggies on the side!

My afternoon snack was a Yoplait plain greek yogurt full of raisins and Fiber One Honey Clusters cereal.

YUM!

Only a couple more hours to go till the weekend!  B has to help his Mom move tomorrow, but we are getting some of her furniture that she is not taking with her to the new place.  It’s a dresser, night stand, and TV stand for our room and a dresser and 2 night stands for one of the girls.  I have got to tackle getting their rooms cleaned up to make room!  Ugh, toys!!

Off to finish up my day!!

That’s how I feel about today.  Hello…Goodbye!  Where has the day gone?

This post is gonna be short so I can get on with some other things needing my attention this evening.  Dishes, ironing, lunch making for tomorrow.  I try to always make my lunch for the next day the night before.  I never really know what I want, so trying to make that decision at 6 o’clock in the morning makes it just that much harder.  Why struggle?

Breakfast:

Same as yesterday!  Told you!

1/2 cup egg beaters

1/2 cup Fiber One

Frank’s Red Hot Sauce

B doesn’t like egg beaters.  Calls  ’em fake eggs and stuff.  He says they smell funny!!  What!  I don’t see it.

Well that means then I’m the only one who eats them so when it says “Use within 7 days of opening”  I have to do just that.  If I get into an oatmeal kick, I’ll forget about the eggs and I HATE to waste food.

Mid morning snack-age was once again a pear.  Ta-Da!

Served on the fancy linens.

Lunch today was a sliced smoked turkey wrap.  I used Oscar Meyer shaved smoked turkey.  45 calories per 6 slices.  I spread some LC cheese Garlic and Herb on the La Tortilla tortilla and laid down some lettuce leafs and rolled it up!  I added a healthy side of fresh broccoli, grape tomatoes, baby carrots, and black olives.  Mustard was used for dippage off camera.

A couple of hours after lunch I snacked on diced mango, and kiwi.  Tropical and tasty!  Believe it or not, this was the first time I’ve ever had fresh mango.  I really love all fruit,  so this was no exception!

Dinner was, well bad.  Really good in a bad, bad way.

Karate night + whiney baby not being happy at home + late night and a hungry Daddy equals =

I wont even picture it!  It was too grotesque! 😉

I will tell you though I had two slices and it was prepared in a hot oven by:

My only redemption is I shred it up with Jillian’s 30 Day Shred though when I got home tonight.  I liked how she alternated the strength, cardio, and abs.  I don’t need to lose weight as much as I need to tone, and maintain so this is exactly what I’m looking for!  I’m excited to get into a routine with this.  It will just mean some early morning butt kicking on my part.

I feel so…out of shape!

I hope everybody’s week is moving right along.  My days have started earlier than normal lately.  I am trying to find time to fit in some excercise and I just got The Biggest Loser DVD Cardio Max.

OMG!  Maybe cause I haven’t been keeping up my physical activity lately, but I need a walker.  For real!  The kind with bright yellow tennis balls on the bottom please.  My legs are sooo sore!

I have been getting up at 4:45 to fit in about 20 minutes of level 2 and level 3 cardio.  I know it’s not much, but it’s better than nothing!  I can’t leave the house for a run at 5 am with B needing to leave for work early and the kids asleep.  It’s hard between Big Girl’s karate classes, and needing to be home with the family after work to then go off to the gym.  So home DVD work out it is.

I am waiting on Jillian’s 30 Day Shred to get here.  Iordered it today through Amazon.  I hear that one is the best one to try for a solid effective workout in a short amount of time.  I am defiantly excited to try it out and am looking forward to getting back into getting the physical fitness in there I enjoyed so much last year.  Time is short, and I need more that’s for sure!!

After my cardio session this morning I cooked up  a 1/2 cup of beaters and a bowl of Fiber One.  Probably one of my favorite combinations, and you may (probably will) see it tomorrow.

Mid morning snack was a lovely pear.  Oh so good.

Lunch was thrown together so quickly this morning for being short on what else?  Time!  I cut up some old-fashioned veggies including squash, cucumber, red bell pepper, baby carrot, and tomato.  I nuked a veggie patty and dipped it all in delicious red pepper hummus!  It turned out to be a fantastic lunch!

A couple of hours later I had my daily dose of calcium with vanilla flavored Chobani.  I mixed in some Yogi blueberry flax cereal.

I love, love, love the fact that I am starting to see peaches again!  I can – and might – eat a peach every single day this summer!  I had one this afternoon.

When I got home it was a mad dash to get the girls in the bath while B started dinner.  Remember our satellite went out last Saturday?  Yeah, it’s still out and we are rocking some fashionable rabbit ears on the 57 inch these days.  Well, no satellite means no DVR, which means…panic!  Just kidding, but The Biggest Loser came back on tonight and we didn’t want to miss too much.

Dinner was too good to rush through though.  It was Wacky Pasta night!

I added squash, black olives, red bell pepper, red pepper flakes for some pizzaz, and balsamic vinaigrette with a splash of lemon juice.  Like I said, it was really, really good!

After the girls went to bed (so I wouldn’t have to share) I made some microwaved baked cinnamon apple.

Well everyone, it’s time for me to get things ready for tomorrow.  Hope everyone has a great night!

Good morning peoples!

I’m just going to dive right in. 

Dinner last night was tacos.  This one is on our regular rotation of meals in our house.  Ground turkey, taco seasoning, and fat-free refried beans make this meal easy.  I add veggies to mine.  See the pretty arrangement?  These diced tomatoes, bell peppers, and lettuce are all mine! 

Whatever did not get shoved into a whole grain corn shell, will be dumped on my plate afterwards and mixed with the taco droppings and remaining beans for a smashing good taco salad.

On to dessert. 

I will without fail eat SOMETHING sweet and delicious every single night!  I must have it!  Last nights fare was a bowl of cinnamon baked apples. 

Diced apples, sprinkled in cinnamon cooked in the mikey for 2 minutes.  OMG!!  I now need to buy more apples.  I love this stuff, and good for you. 

Bad lighting paired with a poor camera phone just doesn’t do them justice.  But I am no food photographer so I’m OK with that.  I also ate an unpictured Kashi Dark Chocolate Chip cookie.  Hehe  🙂

This morning for breakfast – get ready for more photo-riffic gems-I had oatmeal with a scoop of strawberry yogurt and 1/4 cup Fiber One cereal.

There was some cinnamon sprinkled in there too.  Is there anything cinnamon is NOT good on?  I might have to think about that.

4 hours later, I was starting to get hungry again, and dang!  It’s only 9 am!  I am thankful for the box of Fiber One Caramel Delight Cereal I bought last night.  I had packed a cup of the stuff today and it was pretty darn good.  I ate some this morning as my snack, and will probably eat the rest this afternoon with my yogurt mixed in.

So today is Friday folks for most of you.  It’s like Monday for me, oh wait it’s still Friday for me, but I don’t have a day off until next Thursday – so that should make it Monday or is it Tuesday…you get the idea.  It’s my long stretch.  Only once a month but it happens. 

I’m lucky and thankful to have a supporting hubby and loving family who understands that working Momma’s have to do what working Momma’s have to do sometimes.

So it’s off to do just that.  Work.  Later!
