I had a great Saturday peoples!  I awoke to the sounds of Baby girl jumping into bed at 7 am saying “Hi Mommy!”  How could I ignore a the salutations of a happy, little curly headed child?  Well I did try.  I just couldn’t convince her to lay down with me long enough to go back to sleep.  Plus once I am up, I am up.  So I started my Saturday early making coffee, and making the girls raisin pancakes!  It made their morning…no photos though, I did not have any.

I wanted to eat the lonely oatmeal packet I took back with me from our Oklahoma trip last weekend.  That’s right, I smuggled oatmeal from the hotel.  I had taken it from the continental breakfast bar the hotel offered thinking I was going to eat it one night as a dessert with some peach yogurt, but it never happened.

I destroyed consumed the evidence though without too much guilt.

1 packet Quaker Regular Oatmeal

1 TBSP milled flaxseed

a sprinkle of raisins

cinnamon, and more cinnamon

tip of my spoon of Almond Butter

I started some laundry, showered, did the dishes, swept and mopped the floor which included pulling out the fridge!  Oooh!  Treasures!  With kids, crayons are like weeds and they spring up in any and every place imaginable!

We also headed to the grocery store.  Our goal this week it to make meals that we can have plenty of leftovers with.  We are trying to stretch the almighty dollar as far as it will go.  Damn!  I might need to suggest a rubber currency so that could be a little bit easier!  We picked up stuff for chicken tacos, baked apricot chicken, pasta meals with turkey Italian sausage, and homemade pizzas with La Tortilla Wraps.

When we got home I was starved for lunch.  I quickly made a turkey melt with a La Tortilla high fiber tortilla.  I threw in some mesquite smoked turkey and a slice of reduced fat colby and heated it up on the stove until the cheese had melted.  Of course I added in salsa and some Mediterranean Lentil Chips on the side.  Have anyone ever had these lentil chips before?  I picked them up at Marshall’s one day and have never looked back!  30 chips are 110 calories and only 3 grams of fat they are made from, you guessed it!  Lentils!  Great source of fiber and protein!  They are also gluten free.

My snack this afternoon was a 1/4 cup low fat cottage cheese and sliced strawberries.

Big girl and I went for a walk before dinner this evening.  It has been raining all day but there was a break in all the rain so we took off.  Wouldn’t you know it though as soon as we left our street it started to rain again!  She didn’t care so neither did I it was fun!  She got to splash in all the puddles and we ran some of the way home too, so it was a quick but enjoyable walk for the two of us.

Dinner was being prepared when we got home and B was making pizzas!  He had cut up broccoli and bell pepper for my pie.  Also adding in some lean sliced ham strips for protein.  Using tortillas as our pie crusts, they were excellent!  The best part it we will have enough to make this again in the next few days, so not really left overs, but repeat worthy on the same dime is a win in my book!

Baby girl took one look at my pizza and snatched a piece of broccoli at the same time I snapped my picture.

Now she likes a lot of veggies which I love, however, if I tried to feed them to her she would probably refuse so I am content with sharing as long as she eats them!

It’s getting late and I am going to enjoy whats left of my day, so good night blog land!

That’s how I feel about today.  Hello…Goodbye!  Where has the day gone?

This post is gonna be short so I can get on with some other things needing my attention this evening.  Dishes, ironing, lunch making for tomorrow.  I try to always make my lunch for the next day the night before.  I never really know what I want, so trying to make that decision at 6 o’clock in the morning makes it just that much harder.  Why struggle?

Breakfast:

Same as yesterday!  Told you!

1/2 cup egg beaters

1/2 cup Fiber One

Frank’s Red Hot Sauce

B doesn’t like egg beaters.  Calls  ’em fake eggs and stuff.  He says they smell funny!!  What!  I don’t see it.

Well that means then I’m the only one who eats them so when it says “Use within 7 days of opening”  I have to do just that.  If I get into an oatmeal kick, I’ll forget about the eggs and I HATE to waste food.

Mid morning snack-age was once again a pear.  Ta-Da!

Lunch today was a sliced smoked turkey wrap.  I used Oscar Meyer shaved smoked turkey.  45 calories per 6 slices.  I spread some LC cheese Garlic and Herb on the La Tortilla tortilla and laid down some lettuce leafs and rolled it up!  I added a healthy side of fresh broccoli, grape tomatoes, baby carrots, and black olives.  Mustard was used for dippage off camera.

A couple of hours after lunch I snacked on diced mango, and kiwi.  Tropical and tasty!  Believe it or not, this was the first time I’ve ever had fresh mango.  I really love all fruit,  so this was no exception!

Dinner was, well bad.  Really good in a bad, bad way.

Karate night + whiney baby not being happy at home + late night and a hungry Daddy equals =

I wont even picture it!  It was too grotesque! 😉

I will tell you though I had two slices and it was prepared in a hot oven by:

My only redemption is I shred it up with Jillian’s 30 Day Shred though when I got home tonight.  I liked how she alternated the strength, cardio, and abs.  I don’t need to lose weight as much as I need to tone, and maintain so this is exactly what I’m looking for!  I’m excited to get into a routine with this.  It will just mean some early morning butt kicking on my part.

Today is BEAUTIFUL!!  The sun is shining, the temps are in the 50-60’s, the sky is blue!  I love it.  I wish I didn’t have to work, the is gorgeous weather.

So at the store yesterday I picked up a few new items.  I only took my oldest because we are having satellite troubles and B had to stay home for somebody to come by and take a look at it.  sadly though it looks like we’ll have no TV for a week.  I am silently rejoicing…Whoo-Hoo!…but I think my family will slowly implode over the lack of HD branial stimulation.  There have been plenty of discussions already as to what DVD will be played and when.  We only have one DVD player in the house so Daddy and 2 small children will have to learn to share.

Now on to the grocery haul.  We went to plain ‘ol Kroger.  They do have a pretty good organic/natural section though.  Here is what I got among other necessary items:

I love that I found the La Tortilla Factory Low Carb Tortillas.  I have been searching for them everywhere, and I finally found them!  Only 80 calories and 12 g fiber for this huge sucker!  I was also excited to try the Dannon Greek yogurt.  I actually thought I was buying all Dannon, but when I got home I realized I had purchased both the Dannon Greek and the Yoplait Greek.  That’s what happens when your 5 year old comes down with the case of the gimmies when the store decides to put baked goods right next to the milk/dairy section.  Both yogurts are about the same but the Yoplait has fruit and is slightly higher in sugar than the Dannon.  Oh well, they are a good deal at only $1.19 per container so I am more than willing to try both.

We got home super late for our household anyway.  Way past our normal dinner time and we were starved!  While B made dinner I munched on some Wasa crackers and Triple Pepper humus.  I could have eaten this all night, but I would have ruined my appetite!

Dinner was the jambalaya dish he made last weekend.  It contained Healthy Ones Smoked Turkey Sausage, kidney beans, brown rice, and a little bit of shrimp for me.  Excellent flavor and of course Franks Red Hot didn’t hurt.

By the time we finished eating, it was a little after 9, so I wasn’t super hungry for anything sweet.  I did want to try some of the Dannon plain Greek that I had just bought so I crumbled up a Voortman Dark Chocolate Omega 3 Flax Seed cookie, a little bit of Better N Peanut Butter, and a couple of raisins were thrown in too. 

OMG what a yummy yogurt mess!  It wasn’t too terribly filling, just the right amount of sweetness so it was the perfect ending to a busy day!

Today’s breakfast was of course the weekly Sunday donut fix from Peepaw.  The girls were beside themselves anticipating their sugar rush.  I ate another egg and sausage biscuit.  I can’t deny that they are good though!

Lunch for me was early as I had to get to work, so I fashioned a turkey wrap with one of the La Tortilla tortillas, spread some Garlic and Herb Laughing Cow cheese on, and added some deli sliced turkey breast.  I included my veggies.  a side of baby carrots and cucumber with a dab of triple pepper humus.  My pretty peaches were reflective of how I felt about the weather…Sunshine-y!

I had a helper though.  Baby girl was grabbing at the carrots, cucumbers – calling them pickles- and of course we ate the peaches together.  Who could deny this face!
