Good evening happy people!  Assuming you’re happy that is.  We just put the kids to bed and The Biggest Loser is on in the background.  Do you hear that??  Neither do I.  Ahh, silence.

I am sure most everyone goes through a period of feeling stuck in a rut routine that gets really frustrating sometimes.  Not a rut in family life.  I don’t mean anything negative really by saying that-it’s just a lack of time to collect my thoughts and feel…sane, and at ease with my home and self.  My struggle is the lack of time to get everything I feel like I want to, or feel like I NEED to get done, done.  It is extremely frustrating to leave the house at 7:30 in the morning not to return until nearly 7:00 pm.  During that 12 hour stretch I was able to see my family for approximately 1 hour in the AM before school/work.  I was able to work out for exactly 15 minutes (WTH!) because after driving an hour to work, that’s all the time I had left.  I leave work at 6pm only if I am actually able to get out the door on time, and drive 45 minutes to get home.  We eat dinner, and get the kids bathed and in bed.  Now it’s about 8 pm, and I am exhausted! 

I know I will look back on these times and wish I could have them back, with my babies being babies and all…but dang!  For anyone out there who juggles a family, and career, and the evil bills that make it necessary to have the toilets flush and DVD player turn on, then I feel you.  It brings you the most joy you’ll ever be capable of feeling, as well as the highest stress levels one is capable of having.

I am reminded of a simple saying my Dad has used from time to time:  “This too shall pass.”  All too quickly I’m sure.

On to my FOOD!!

Let me recap Monday and Tuesday for ya!

BREAKFAST

Monday:

1/4 cup egg beaters, and 2 egg whites mixed with spinach.  Also a bowl of Fiber One cereal.

Tuesday:

Today was just a simple bowl of Fiber One and strawberries.

POST WORKOUT SNACKS

Monday:

1/4 up low-fat cottage cheese and half a pear.

Tuesday:

A banana.  🙂 Sorry no picture.  I ate it too fast.

LUNCH

Monday:

Monday’s lunch was a big ‘ol salad.  In the bowl was spinach, sliced mushrooms, banana peppers, baby carrots, grape tomatoes, cucumber, black olives, a can of Swanson chicken Breast, snow peas, 1/2 cup of cottage cheese.

I licked the bowl.  It was good, real good.

Tuesday:

Veggie snacks, Morningstar Farms Veggie Patty, mustard, an apple.

AFTERNOON SNACKS

Monday:

Yogurt Mess with the other half of my pear from the morning, and some raisins.

Half a Banana Bread Larabar that I got for a steal at Marshall’s.  I LOVE to hunt their food goodies for stuff like this there!

Tuesday:

Yogurt mess with a kiwi, and raisins.  Redundant much?  I think so, but it’s OK.

DINNER

Monday:

Tacos!  La Tortilla tortillas, Jenny-O taco seasoned turkey meat, veggies, and fat-free refried beans.  Yum! 

Tuesday:

Tonight hubby was feeling creative.  He wanted to make a turkey smoked sausage dish but instead of the normal pan fried method he uses, he baked it in the oven with stewed tomatoes, sliced mushrooms, black beans, baby carrots, black olives, and red bell pepper.  He also went as far as to make a “topping” out of crushed Fiber One cereal to go over the mixture.

He likes to plate…very sweet!

It was delicious!!  The kids liked it too, so it was a hit across the board! 

I have the best husband ever!  Which gives me even more reason to want to get home as quickly as possible after my glorious days spent punching the clock.

I am off now to watch the rest of The Biggest Loser and make something yummy to nosh on.

Good morning!

I tried something a little different this morning for breakfast. 

I cooked a 1/2 cup of egg beaters and 1 egg white together and made an egg burritto.  I also added some chopped mushrooms and rolled it in a La Tortilla tortilla wrap.

It made the tortilla break open a little, It was pretty stuffed!

I am STARVING today!!   I snacked on some Kashi Heart to Heart in the car.  I also ate my morning snack of a pear at my desk.

Can’t wait until lunch!  I’m gonna leave you with my 2 desserts from last night.

I had a bowl of strawberry fro-yo and choco-chips.

 Then a toasted crumpet with peanut butter, choco-chips, and a little coconut flakes sprinkled on top!

 Mmmm!

This morning’s B-Fast was an egg sandwich on toasted light wheat bread, with LC cheese spread on.  A side of cantaloupe made it sweet!

So I’ve been running like crazy lately.  Friday I helped at my daughter’s TaeKwonDo fundraiser garage sale.  I was there all morning into the afternoon, and came home only to crash on the sofa for a mid afternoon nap.  Needless to say I didn’t really snap any pictures of what I ate which was just an Apple Pie LaraBar and a slice of the yummy veggie pizza from Pizza Hut.

Some of the food I ate later in the day though was some carrots and peanut butter.

Then it was off to her fight class that evening.  It’s about an hour long and she practices up on her sparring for the upcoming tournament in April.  After dinner we swung by Rosa’s Tortilla Factory and I ordered a shredded chicken salad.  I forgot to take a pic though.  The long day was getting to me.

Later that night, I did try my hand at some homemade Peanut Butter Cups courtesy Love Veggies and Yoga’s recipe.

I burnt the chocolate a little, but they still came out pretty good.  Who does that!?  I do.  If you read up about me I don’t cook, so don’t be surprised.

I also had a simple bowl of cantaloupe.

Today we waited around for the satellite guy to show up and fix our dish.  Our week without “real” TV is over.  Back to the plethora of never-ending channels and DVR.  Plus for our inconvenience, we received a free week on our next bill and 3 months of Shotime for free.  How nice.

Lunch today was on our way to the grocery store.  When you ask a 5 nd 2 year old where they want to eat what do you think they will say?  If you guessed CiCi’s Pizza you’re right!  Ok, so for like the 3rd day in a row I’m eating pizza.  But this time they had salad to go along with it so I filled up.

I made a huge salad and enjoyed 2 slices of pizza.  A ham and pineapple, and a veggie.

After going to two different stores to get our groceries ( Kroger didn’t have the plain Greek Dannon, so I also tried Albertson’s).

B had picked up a new item for us!  He found some mini red bananas.  Pretty cool huh?

It was tiny, a little mushier than a yellow banana, but tasted pretty much the same.

We both tried the red banana but what I really wanted was a pear!  I cut one of those bad boys up and munched away!

So that’s my day so far.  I still have a ton of stuff to do around the house before the weekend is over, but I may just take it easy and see what happens to my chores when I blink 3 times and wiggle my nose a little.

I’ll let you know how that works out…K?

That’s how I feel about today.  Hello…Goodbye!  Where has the day gone?

This post is gonna be short so I can get on with some other things needing my attention this evening.  Dishes, ironing, lunch making for tomorrow.  I try to always make my lunch for the next day the night before.  I never really know what I want, so trying to make that decision at 6 o’clock in the morning makes it just that much harder.  Why struggle?

Breakfast:

Same as yesterday!  Told you!

1/2 cup egg beaters

1/2 cup Fiber One

Frank’s Red Hot Sauce

B doesn’t like egg beaters.  Calls  ’em fake eggs and stuff.  He says they smell funny!!  What!  I don’t see it.

Well that means then I’m the only one who eats them so when it says “Use within 7 days of opening”  I have to do just that.  If I get into an oatmeal kick, I’ll forget about the eggs and I HATE to waste food.

Mid morning snack-age was once again a pear.  Ta-Da!

Lunch today was a sliced smoked turkey wrap.  I used Oscar Meyer shaved smoked turkey.  45 calories per 6 slices.  I spread some LC cheese Garlic and Herb on the La Tortilla tortilla and laid down some lettuce leafs and rolled it up!  I added a healthy side of fresh broccoli, grape tomatoes, baby carrots, and black olives.  Mustard was used for dippage off camera.

A couple of hours after lunch I snacked on diced mango, and kiwi.  Tropical and tasty!  Believe it or not, this was the first time I’ve ever had fresh mango.  I really love all fruit,  so this was no exception!

Dinner was, well bad.  Really good in a bad, bad way.

Karate night + whiney baby not being happy at home + late night and a hungry Daddy equals =

?????

I wont even picture it!  It was too grotesque! 😉

I will tell you though I had two slices and it was prepared in a hot oven by:

My only redemption is I shred it up with Jillian’s 30 Day Shred though when I got home tonight.  I liked how she alternated the strength, cardio, and abs.  I don’t need to lose weight as much as I need to tone, and maintain so this is exactly what I’m looking for!  I’m excited to get into a routine with this.  It will just mean some early morning butt kicking on my part.

I feel so…out of shape!

I hope everybody’s week is moving right along.  My days have started earlier than normal lately.  I am trying to find time to fit in some excercise and I just got The Biggest Loser DVD Cardio Max.

OMG!  Maybe cause I haven’t been keeping up my physical activity lately, but I need a walker.  For real!  The kind with bright yellow tennis balls on the bottom please.  My legs are sooo sore!

I have been getting up at 4:45 to fit in about 20 minutes of level 2 and level 3 cardio.  I know it’s not much, but it’s better than nothing!  I can’t leave the house for a run at 5 am with B needing to leave for work early and the kids asleep.  It’s hard between Big Girl’s karate classes, and needing to be home with the family after work to then go off to the gym.  So home DVD work out it is.

I am waiting on Jillian’s 30 Day Shred to get here.  Iordered it today through Amazon.  I hear that one is the best one to try for a solid effective workout in a short amount of time.  I am defiantly excited to try it out and am looking forward to getting back into getting the physical fitness in there I enjoyed so much last year.  Time is short, and I need more that’s for sure!!

After my cardio session this morning I cooked up  a 1/2 cup of beaters and a bowl of Fiber One.  Probably one of my favorite combinations, and you may (probably will) see it tomorrow.

Mid morning snack was a lovely pear.  Oh so good.

Lunch was thrown together so quickly this morning for being short on what else?  Time!  I cut up some old-fashioned veggies including squash, cucumber, red bell pepper, baby carrot, and tomato.  I nuked a veggie patty and dipped it all in delicious red pepper hummus!  It turned out to be a fantastic lunch!

A couple of hours later I had my daily dose of calcium with vanilla flavored Chobani.  I mixed in some Yogi blueberry flax cereal.

I love, love, love the fact that I am starting to see peaches again!  I can – and might – eat a peach every single day this summer!  I had one this afternoon.

When I got home it was a mad dash to get the girls in the bath while B started dinner.  Remember our satellite went out last Saturday?  Yeah, it’s still out and we are rocking some fashionable rabbit ears on the 57 inch these days.  Well, no satellite means no DVR, which means…panic!  Just kidding, but The Biggest Loser came back on tonight and we didn’t want to miss too much.

Dinner was too good to rush through though.  It was Wacky Pasta night!

I added squash, black olives, red bell pepper, red pepper flakes for some pizzaz, and balsamic vinaigrette with a splash of lemon juice.  Like I said, it was really, really good!

After the girls went to bed (so I wouldn’t have to share) I made some microwaved baked cinnamon apple.
