Sorry about being MIA for the past few days, but honestly I haven’t felt “into it” lately.  I haven’t really been feeling the need to rush off and blog about what I’ve eaten recently.  I haven’t photographed all my food either.  It’s been pretty repetitive anyway.  If it’s not broke… 

I can assure you my breakfasts have looked like this all week:

Fiber One with Almond Milk, and either strawberries or blueberries.  I am usually not a fan of this much milk in my cereal.  This morning though I measured my milk to show myself the serving size 1/2 cup.  Suggested serving is 1 cup and even the 1/2 cup was WAY too much for me to handle on a normal day.  Just sayin.

I did get a couple of slices of this at Big girl’s Tae Kwon Do bake sale.

Homemade Pumpkin bread!  OMG! 

Had I been blogging daily you would have seen it in these little mixes everyday!

So yum!

Lunches have been pretty salad-y with a couple of days looking just like this:

Spinach, mushrooms, carrots, cucumber, grape tomatoes, diced pear, and cottage cheese.

I also slipped in a meaty wrap a couple of days ago.

Turkey and pastrami on a La Tortilla Whole Wheat.  Did I mention mustard??

I have snacked on a little of this and a little of that.

Last nights dinner was  baked salmon and couscous.

Wow!  That’s one BAD picture!!  But the grub was right on!

Tonight though we let the girls decide on what they wanted to eat.  B said they picked but I have a feeling he helped “suggest” what dinner should be.

Little Ceasars $5.00 Hot and Ready!  Uh-huh!  Yeah…it was good though.

Check out how freakin CUTE these little Easter candies are!!

They were delivered to us a work by one of our residents and they are Easter egg chocolates!  So cute and full of chocolate!  I ended up having a pretty indulgent day. 

I wasn’t going to post anything tonight, but I am glad I did.  It feels good to get caught up.  Oh!  And check out the new little Foodie Blogroll widget on the side!  I am moving on up!  Now if I could get more than 3 people to read my blog it may give me a little more inspiration to converse with an actual audience.  Ever get the feeling you are talking to yourself?  Sometimes I do.

Now I really must go figure out what I did to my camera camera phone and fix my horrible pictures!!

Pumpkin Bread

This morning’s B-Fast was an egg sandwich on toasted light wheat bread, with LC cheese spread on.  A side of cantaloupe made it sweet!

So I’ve been running like crazy lately.  Friday I helped at my daughter’s TaeKwonDo fundraiser garage sale.  I was there all morning into the afternoon, and came home only to crash on the sofa for a mid afternoon nap.  Needless to say I didn’t really snap any pictures of what I ate which was just an Apple Pie LaraBar and a slice of the yummy veggie pizza from Pizza Hut.

Some of the food I ate later in the day though was some carrots and peanut butter.

Then it was off to her fight class that evening.  It’s about an hour long and she practices up on her sparring for the upcoming tournament in April.  After dinner we swung by Rosa’s Tortilla Factory and I ordered a shredded chicken salad.  I forgot to take a pic though.  The long day was getting to me.

Later that night, I did try my hand at some homemade Peanut Butter Cups courtesy Love Veggies and Yoga’s recipe.

I burnt the chocolate a little, but they still came out pretty good.  Who does that!?  I do.  If you read up about me I don’t cook, so don’t be surprised.

I also had a simple bowl of cantaloupe.

Today we waited around for the satellite guy to show up and fix our dish.  Our week without “real” TV is over.  Back to the plethora of never-ending channels and DVR.  Plus for our inconvenience, we received a free week on our next bill and 3 months of Shotime for free.  How nice.

Lunch today was on our way to the grocery store.  When you ask a 5 nd 2 year old where they want to eat what do you think they will say?  If you guessed CiCi’s Pizza you’re right!  Ok, so for like the 3rd day in a row I’m eating pizza.  But this time they had salad to go along with it so I filled up.

I made a huge salad and enjoyed 2 slices of pizza.  A ham and pineapple, and a veggie.

After going to two different stores to get our groceries ( Kroger didn’t have the plain Greek Dannon, so I also tried Albertson’s).

B had picked up a new item for us!  He found some mini red bananas.  Pretty cool huh?

It was tiny, a little mushier than a yellow banana, but tasted pretty much the same.

We both tried the red banana but what I really wanted was a pear!  I cut one of those bad boys up and munched away!

So that’s my day so far.  I still have a ton of stuff to do around the house before the weekend is over, but I may just take it easy and see what happens to my chores when I blink 3 times and wiggle my nose a little.

Happy Monday!  Well what’s left of it.  The day is done for most, and myself included.  I wanted to try to fill you in on some eats lately, but be forewarned…so of my pics are pretty bad.  I’ve had lighting issues I guess.  I hope it’s not the operator.

Dinner last night was baked chicken breast smothered in sliced canned tomato.  A slice of sweet potato and mixed veggies.  Pretty good Sunday night dinner.

Check out the yogurt I just bought on Saturday.  I did not notice this until I was viewing the picture I took after uploading it!  I was eating this Sunday afternoon 2/28/10.

The date said sell by 2/25/10!  Of course it wasn’t bad, but I have a weird THING you could call it about eating foods after the sell by, use by date.  Yeah, uh-huh.  Icky!  Oh well.

Breakfast this morning did not come out looking appetising at all.  It was delish though, it just didn’t photograph well.  I made 1/3 cup Milled flax seed and soy hot cereal, mixed with water, and half a banana.  It hit the spot!

For my snack this morning I ate an unphotographed apple.  Probably best considering the circumstances…bad lighting and all.

Lunch today was a herbivore’s smorgasbord!  I had a HUGE salad mixed with sliced squash, cucumber, red bell pepper, baby carrot, broccoli, grape tomatoes, and green leaf lettuce.  I also added in some sliced smoked turkey (sorry herbivore) and Kraft fat-free cheddar.

Hello Kitty container held diced cantaloupe and raisins.  Yum!  The salad was so big, I actually couldn’t touch the cantaloupe until later on in the day for my afternoon snack-age.

So Monday nights have been exceptionally late for me lately because I’ve been taking a Parenting with Love and Logic class at my daughter’s school for the past 5 weeks. Tonight was my last night of leaving the house at 7:30 am not to arrive home until 8:30 pm!  Yipee!  I ate an apple pie Larabar on my way to the class tonight so my stomach wouldn’t be talking louder than the instructor.  It was my first Larabar.

My concensus was good, but I am still out on the whole bar being satisfying thing.  I can’t do it.  I was still hungry just a short time later.  It’s not bad in the event you are just trying to keep hunger at bay for a little while though, a temporary fix.

Dinner was leftover jambalaya from Saturday.  I rolled what I could into a La tortilla Factory wrap, and forked the rest.

Dessert tonight was simply fat-free vanilla fro-yo with a crumbled up piece of graham cracker and a couple of chocolate chips.  Sweet!!

Well good night out there, my computer is trying to give up, so I’m going to let it win tonight.

For lunch today my boss and I found ourselves at Chili’s.  I had brought my left over dinner from last night, my MIA carrot from yesterday, and an apple…but oh well I guess.  I WILL eat my poor carrot tonight though after all this fuss about a carrot! 

Chili’s changed their menu by the way.  I ordered the chicken and green chile soup with a house salad.  I loved this soup!  It had avocado, rice, chicken, and a nice green chile flavor.  I did add some Tabasco though to turn up the heat a little.

Salad was satisfying.  Always like a good salad…sans croutons though.

My mid afternoon snack was my normal cup of yogurt with a sliced kiwi.  Nothing too exciting but very good.

I have a long week in store since I have not only worked all of this week, I will also work through the weekend and into next week until Thursday when I leave early to start my weekend then.  I’ll be able to enjoy a 3 1/2 day weekend at least.  I have to work the first weekend of every month here so that means I work it straight through. 

I need meal ideas for my long stretch, so any suggestions would be great!
